Mediterranean Layer Dip

Ingredients

For the Tzatziki

  • 1 heaping cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tbsp fresh dill or 1 tsp dried
  • 1 tsp white vinegar
  • 1/2 small cucumber, seeded, grated, drained
  • 1/4 tsp salt
  • black pepper

Remaining Dip Ingredients

  • 10 oz prepared classic hummus
  • 1/3 cup fresh tomatoes diced
  • 1/3 cup roasted red bell peppers diced
  • 1/3 cup feta cheese crumbles
  • 2 scallions chopped
  • shredded lettuce optional
  • olive oil drizzle
  • sriracha or hot sauce optional
  • grilled lemon optional garnish

Instructions

  1. In a small bowl, mix all of the tzatziki ingredients together. Chill in the fridge for at least an hour for the flavors to come together before assembling the layers. Make sure the grated cucumber is drained. Add grated cucumber into a paper towel, and squeeze excess liquid out.

  2. Once tzatziki has chilled, you can layer the dip onto a large shallow platter. Spread the hummus evenly on the bottom, followed by the tzatziki, leaving a border of hummus showing. Sprinkle with tomatoes, roasted red peppers, scallions, and feta. Drizzle lightly with good olive oil and hot sauce if desired. Serve with crispy pita chips, warm naan bread, and fresh veggies for dipping!
