Summer Berry Salad with Greek Yogurt Poppy Seed Dressing

This summer berry salad with Greek yogurt poppy seed dressing just screams SUMMER! This is my Panera Bread copycat recipe. They have a similar seasonal salad with berries and poppy seed dressing, yum! Because I know peach season is upon us I thought they would be really good in this…and I was right! They pair perfectly with the other fruit, and they go great with the dressing.

My version of poppy seed dressing is super healthy, much lower calorie than your super sweet version. I used Greek Yogurt, and for the sweetness I used Truvia which is a 0 calorie natural sweeter made from the stevia plant. You’d never know the difference in tasting this dressing that it was low-cal.

I used strawberries, blueberries, and peaches for this recipe, but any of your favorite fruits would be great. As you know…I love goat cheese in a salad, I just think it brings such an awesome flavor profile when paired with other ingredients. I threw in some toasted almonds for crunch, and a mixture of greens. I love romaine for added crispness, but also some softer greens like spinach or arugula make for a really good mix. You could certainly use all of one green for your salad, I just like the combo of textures and flavors you get when using a variety of greens.

I almost always buy a rotisserie chicken at the store every week. It makes lunches super easy, and they are perfect for salads like this. Adding chicken takes this salad up a notch making it a filling and healthy meal for lunch or dinner! Not a meat eater? Just leave out the chicken and you’ve got a dynamite vegetarian dish!

Summer Berry Salad with Greek Yogurt Poppy Seed Dressing

Ingredients

For the dressing

  • 3/4 cup Greek Yogurt
  • 1/4 cup water or milk
  • 2 tbsp sugar or alternative sweetener
  • 1/4 cup white wine vinegar
  • 2 tbsp poppy seeds
  • 1/2 tsp dry mustard
  • pinch salt

Salad

  • 1/2 cup toasted slivered almonds
  • romaine
  • arugula or spring mix
  • crumbled goat cheese
  • strawberries chopped
  • blueberries
  • peaches chopped
  • 1 cup chicken breasts cubed, optional

Instructions

  1. In a medium bowl, whisk all dressing ingredients together until smooth. Chill until ready to dress salads.

  2. Arrange salad ingredients into bowls. Drizzle with poppy seed dressing, toss and enjoy!

Recipe Notes

I don’t use exact measurements when I make a salad so I opted to do the same when writing this recipe. You can make the dressing and use it throughout the week on 1-6 salads depending on how many you’re feeding and portion size.

I like to use chicken to make it a meal, but certainly optional. Any fruit would be great in this, I just used what was in season and looked good at the store.
