Lemon-Pepper Parmesan Asparagus

Easiest. Side. Ever.

For real…very little prep, a dash of this, a sprinkle of that, and bake.

While at Trader Joe’s picking up the amazing everything bagel spice this lemon pepper grinder caught my eye and it’s been so good for veggies and proteins! If you haven’t used the everything bagel spice yet, do it, seriously! SO good on eggs, avocado toast, regular toast, just delightful! Anyway…you can get lemon-pepper seasoning anywhere you buy spices. It is also really great on chicken breast or spice up some steamed veggies! These little guys take just minutes to make and are a delicious and beautiful side to any protein! Enjoy!

Lemon-Pepper Parmesan Asparagus

Ingredients

  • 1 bundle fresh asparagus
  • drizzle olive oil
  • 2 tsp lemon-pepper seasoning
  • 1/4 cup fresh grated Parmesan cheese

Instructions

  1. Preheat oven to 425 degrees 

  2. Rinse and trim asparagus. Where the stem naturally breaks is where you want to trim off the woody ends. Arrange the asparagus on a baking sheet.

  3. Drizzle with olive oil, sprinkle with lemon-pepper seasoning, and toss to coat. Sprinkle with grated cheese. Bake for 8-9 minutes and serve immediately. 

Recipe Notes

I've also chopped them up and cooked them in a skillet over the stove with a little olive oil, just as good!
