Five Cheese Penne Pasta with Sausage and Sweet Peppers

Have you ever used those cute little mini sweet bell peppers that come in three colors? They work so perfectly for this dish, and you can find them in any produce section. They’re usually red, yellow, and orange mini peppers, so adorable, easy to slice, and cook up in no time! I’m definitely going to try grilling some of those little guys this summer.

I used a spicy Italian sausage in my dish, but if you are not into spice, just use a mild or sweet Italian sausage and that would be just as delicious. If you like heat, definitely go for the spicy! I love to use hot Italian turkey sausage when I can find it. I just sautéed up those little bell pepper slices in some olive oil, dropped in some minced garlic (can you just imagine the smell when the garlic hits the hot pan, heavenly!), and then mix everything together for a cheesy, hearty, comforting meal in minutes! I just LOVE cheesy pasta, you cannot go wrong! Hope you enjoy!

Five Cheese Penne Pasta with Sausage and Sweet Peppers

Ingredients

  • 1 pkg Old Home Foods Five Cheese Penne Pasta
  • 1/2 lb Italian sausage mild or spicy
  • 1 tbsp olive oil
  • 8 mini tri-colored bell peppers thinly sliced
  • 2 cloves garlic minced
  • 1/2 cup parmesan cheese grated
  • water or milk for thinning sauce

Instructions

  1. Brown the sausage in a large skillet over med-high heat until cooked through. Drain any excess fat if necessary.
  2. Heat the pasta according to the package instructions using the stove top method. Be careful not to burn to avoid sticking.
  3. While the sausage is browning, heat the olive oil over medium heat in a small/medium skillet, and add thinly sliced bell peppers. Cook over medium heat until peppers start to soften, about 5 minutes. Add minced garlic, reduce heat to low. Cook for another 1-2 minutes. Remove from heat.

  4. Combine the sausage, pasta, bell peppers and garlic, and half of the grated Parmesan cheese. If it seems too thick you can add a little milk or water, it will thicken the longer it sits. Serve in bowls, and garnish with remaining Parmesan cheese.
