Greek Turkey Burgers

If you’ve ever thought turkey burgers were bland and boring, think again! These are my go-to weeknight turkey burgers. They are packed with the flavors of pesto, feta cheese, and roasted red bell peppers. Easy, healthy, and very satisfying!

I top these burgers with a Greek yogurt and pesto mixture, but they would be equally delicious with my cool, creamy, tzatziki sauce found in my Meatball Gyro post. Try them both! I also like to use the Greek yogurt pesto spread on a BLT, so good!

Ingredients

  • 1 lb lean ground turkey
  • 4 hamburger buns
  • 3.5 oz feta cheese fat free
  • 1/4 cup roasted red peppers diced
  • 1 tsp prepared basil pesto such as Classico
  • 1/2 tsp garlic powder
  • salt and pepper
  • drizzle olive oil
  • 1 roma tomato sliced
  • greens such as romaine, arugula, spinach

Greek Yogurt Pesto Spread

  • 1/2 cup fat free Greek yogurt
  • 1 tbsp prepared basil pesto

Instructions

  1. In a medium bowl, combine the ground turkey, 1/4 c. of the feta cheese, diced roasted red peppers, 1 tsp of pesto, garlic powder, salt and pepper. Divide mixture evenly and form 4 patties.

  2. Heat a large skillet over med-high heat and drizzle with olive oil. Place burgers in heated skillet, turn down to medium and cover. Cook for about 5 minutes before flipping, covering will help steam and cook quicker. Flip and cook for an additional 5 minutes or until burgers are cooked all the way through. Top with remaining feta cheese and cover to melt.

  3. While burgers are cooking, combine the Greek yogurt pesto spread ingredients and set aside.

  4. Assemble burgers with Greek spread, tomatoes, lettuce, and your burger, enjoy!

Recipe Notes

These would also be good on the grill if you are able to use a non-stick grilling spray to avoid sticking and crumbling.
