Cookie Monster Ice Cream Sandwiches

Calling all cookie monsters! These ice cream treats will basically fulfill any cookie lovers cravings! Monster cookies with peanut butter, M&M’s, chocolate chips, and oatmeal are the “bread” to these sandwiches filled with chocolate chip cookie dough ice cream, and rolled in crushed Oreo cookies. How could you not LOVE these?!

I used this super easy monster cookie recipe from Food Network: Monster Cookies

That recipe makes about 3 dozen cookies. You could always freeze the dough too for quick cookies any time! My recipe for the sandwiches makes 6  so you only need 12 of the cookies…or maybe a few more for snacking while you assemble!

You could certainly get creative with a treat like this. I used chocolate chip cookie dough ice cream to keep with my cookie theme, but use any kind you like! You could also use other fun toppings to replace the Oreos…but I mean…Oreos are the best sooo…

Such a fun summer treat to make and enjoy with the kids! YUM!

Cookie Monster Ice Cream Sandwiches

Ingredients

  • 12 monster cookies recipe link in blog post
  • 2 cups chocolate chip cookie dough ice cream
  • 12 Oreo cookies crushed

Instructions

  1. Let ice cream sit out of the freezer for 5-10 minutes to soften before assembling. Add crushed Oreo cookies into a shallow bowl.

  2. Scoop about 1/3 cup of ice cream onto one of the monster cookies. Gently press another monster cookie on top to make a sandwich. Roll the sandwich in the crushed Oreos to coat the ice cream, gently press them into the ice cream to help stick. Place on a tray in the freezer immediately. 

  3. Repeat with the rest of the sandwiches, placing each one in the freezer when complete. Once all are assembled, wrap individually with plastic wrap. Freeze for at least 1 hour before serving to harden. Enjoy!
