BLT Bruschetta Roll-Ups

BLT’s are so underrated! When I was a kid we would go out for breakfast on Sundays after church, and I wasn’t a huge breakfast fan so I’d order a BLT minus the tomato and mayo and sub in butter. My tastes have certainly changed! These wraps are SUPER easy and packed with great flavors, no boring BLT’s over here! You could make these into a sandwich but the pesto cream cheese spread goes great on a wrap. I’ve often made pesto mayo or pesto Greek yogurt to use on sandwiches, it really adds a ton of great flavor!

In these wraps I used a high protein wrap, but any tortilla wrap would work great. The sweetness from the balsamic tomatoes goes so well with the salty bacon and savory basil pesto spread. All topped off with peppery arugula, my favorite green!

Seriously easy, super delicious, and perfect for a quick snack, lunch, or appetizer.

BLT Bruschetta Roll-Ups

Ingredients

  • 4 medium tortilla wraps
  • 4 oz cream cheese
  • 1 heaping tbsp prepared basil pesto
  • 4 roma tomatoes diced
  • 12 slices bacon cooked
  • arugula
  • drizzle balsamic glaze

Instructions

  1. In a small bowl combine cream cheese and pesto. In another small bowl drizzle diced tomatoes with balsamic glaze, stir to coat.
  2. Spread cream cheese mixture evenly over the tortillas. Arrange 3 slices of cooked bacon on each tortilla. You could also chop the bacon and sprinkle. Arrange arugula over bacon, and scatter with balsamic tomatoes.
  3. Tightly wrap up the tortillas. Enjoy as a full wrap, serve cut in half, or slice into bite sized appetizer portions held together with toothpicks! Yum!

Recipe Notes

I use the balsamic glaze from Trader Joes but you can find it in most grocery stores now.
